Mine takes about 90 minutes to double in bulk, but if it is really cold it could take up to 2 hours. <br />I don't knead it much, but I do handle it enough while shaping it to get any visible bubbles out. When you put the dough in a greased bowl and say "grease top" do you mean to spray the top of the dough before you cover it? How long does it usually take to "double in bulk" (I know this will probably vary but just want to get an idea)?
