Firecracker Ice Pops!

See that firecracker?
We made these great homemade firecracker popsicles with fresh fruit and yogurt, and they were great. Healthy, fun and perfect for 4th of July.
You will need 1 1/2 cups of fresh strawberries, 1 1/2 cups of fresh blueberries, 8 oz. of plain non-fat yogurt, and 2-4 tbsp of sugar. Oh, and a popsicle mold. You can also use plastic cups and craft sticks if you don't have a mold. Recipe from July/August issue of Everyday Food.
Puree your berries (separately) in a food processor or blender until smooth. Add a tbsp of sugar or to taste. If your berries are fresh and sweet you may not need to add this sugar.
I used my mini-food processor and my little helper enjoyed holding the button down while it did its magic.
You will also need to mix 2 tbsp of sugar with the plain yogurt. Now you are ready to layer in your molds.
Using a little spoon (baby spoons work great) layer the purees, alternating with the yogurt. We did some with thicker layers and others with smaller layers. There really is no science, just have fun!
Once the molds are filled to the top you are ready to swirl them up. Use a chopstick or a wooden skewer and swirl up and down in a circular motion. Jack loved doing this step. This is what makes the layers look like firecrackers.
See how the layers all swirled together? They are ready for the freezer now. Ours took about 3 hours to firm up. A trick for getting them to easily release from the mold when you are ready to eat - run under hot water for about 30 seconds.
Then eat and enjoy with your Auntie. Jack was happy to share his special treat with Auntie Lacie after she gave him a "salon" haircut on the back porch :) These taste great and are pretty healthy too!

  1. I don't have the mold but I like the longer shape of these. I'm thinking these are only about 10g carbs each and I have all the ingredients at home. Looks great! The boys are so cute!
