Apple Cake

It's Fall! We went apple picking a couple weeks ago in Maine and I have been baking with the 17 pounds of apples we picked. First up is Apple Cake. Sorry for the poor pictures, it was later in the day and no good natural light.
Apple Cake
Ingredients:
6 large apples, peeled & sliced
1/3 cup sugar
1 teaspoon cinnamon
4 eggs
1/2 cup vegetable oil
3/4 cup orange juice
2 teaspoons vanilla
1 1/2 cups sugar
3 cups flour
3 teaspoons baking powder

Directions:
Preheat oven to 350 degrees.

Mix peeled & sliced apples with 1/3 cup sugar and cinnamon. Set aside.

Mix the rest of ingredients in a mixer. Grease and flour tube or Bundt pan.

Pour half of batter into pan, top with apples. Pour rest of the batter over apples.

Bake for 50-55 minutes at 350 degrees. Cool 10-15 minutes and remove from pan.

Glaze:
Glaze with mixture of 2 cups of confectioners' sugar and adding 1 tablespoon of orange juice (or milk with one half teaspoon of almond extract) at a time to make a smooth consistency. Pour over cake.
