Apple Vinaigrette with Spinach Fall Salad

I love fall. It truly is my favorite season, especially with all the great fall foods and flavors that it brings. One of my favorite dressings is this apple vinaigrette. The recipe came from my good friend Marcia, who got it from the back of a grocery store flyer. It is easy to put together and makes a good amount so you can enjoy it all week long.

Apple Vinaigrette

Ingredients:
3/4 cup of peeled and finely diced Macintosh apple (about 1 medium apple)
1/8 cup of finely chopped onion
1/2 cup apple cider vinegar
1/2 cup granulated sugar
1/2 tsp ground mustard
1/2 tsp coarse salt
1/2 cup canola oil

Directions:
Combine all ingredients in a blender or food processor and blend until smooth.
Keep pulsing until all apple and onion is pureed and no small bits remain. This will take 1-2 minutes. Store in a jar in the fridge until ready to use. Yield: 1 1/2 cups
Spinach Fall Salad
1 cup mixed greens
3-4 cups fresh spinach, roughly chopped
1/2 cup candied pecans (brown pecans in small pan with 1 tbsp each butter and sugar)
1 small apple thinly sliced
2 ounces sharp white cheddar cheese, cut into small chunks
Combine ingredients and dress generously with apple vinaigrette. Serve immediately. Enjoy!
Serves 4.
