Superbowl Pick - Mexican Corn Dip

Here is another easy, fun food to eat for Superbowl - Mexican Corn Dip! I love that this is a cold dip, so you prepare it ahead and chill until you are ready to serve. This recipe is from my friend, Rachel. Rachel is from Texas and she cooks some great Texan and Southern style foods. You know people are from the South when they refer to Rotel tomatoes as just "Rotel." It has been fun to try new things and increase my recipe collection, thanks to her.
Mexican Corn Dip
Ingredients:
2 small cans Mexican style corn (drained)
1 jalapeno (seeded and diced)
1 10 oz. can Rotel tomatoes (drained)
1 cup mayonnaise
1 cup sour cream
10 oz shredded cheese (cheddar and colby are good choices here)
1/2 teaspoon onion powder
1/2 teaspoon season salt
pinch of sugar
1-2 scallions, sliced - for garnish
Directions:
Mix all ingredients (except the scallions) and chill for about two hours. Serve with large Frito scoop chips or tortilla chips.
