Easter Menu 2011


Easter is this coming Sunday, and I have been cleaning my house preparing to have my family over as we celebrate the death, burial and Resurrection of our Savior, the Lord Jesus Christ. After church on Sunday morning, we will head back to our home for an Easter egg hunt for the kids and Easter dinner. Thankfully, I do not have to do it all alone, everyone is helping out and bringing something. I thought I would share our menu, and it will look pretty similar to last year's Easter Menu. Spiral Hams are a great crowd feeder and cook fairly quickly in the oven. I love having the leftover ham too, for casseroles, sandwiches and soups.

Appetizers:
Crackers with Port Wine Cheese Spread
Chips & Onion dip *we also add a dash of Frank's red hot sauce and squirt of lemon juice

Dinner:
Spiral Ham
Green String Beans
Salt Potatoes
5 Cup Salad (recipe below)
Garden Salad with homemade vinaigrette(recipe below)
Easy Homemade Dinner Rolls

Dessert:
Chocolate Eclair Dessert (recipe below)
Fresh Strawberries with Vanilla Dip (recipe below)

5 Cup Salad
Mix together 1 cup of each of the following ingredients:
mini marshmallows
shredded coconut
pineapple tidbits
mandarin oranges
sour cream
Chill until ready to serve.

Champagne Vinaigrette
1/4 cup Champagne vinegar (or white wine vinegar)
1/3 cup Extra Virgin Olive Oil
1/2 tsp Dijon mustard
salt
pepper

Whisk all ingredients together until well combined. Toss with salad just before serving.

Chocolate Eclair Dessert
recipe from Sandra Sullivan
1 box graham crackers
2 (3 3/4 oz) boxes vanilla instant pudding
1 8 oz container Cool Whip

Lightly butter 9x13 pan and line with crackers. Mix pudding and milk. Beat 2 minutes at medium speed. Fold in cool whip. Pour half over the crackers. Layer crackers, pudding and crackers over this. Refrigerate 2 hours. Frost and refrigerate overnight.

Chocolate Frosting
2 Tbsp cocoa
2 Tbsp oil
2 tsp Karo
3 Tbsp milk
3 Tbsp softened butter
1 1/2 cup confectionery sugary
2 tsp vanilla
Beat all ingredients together until smooth. Frost top of dessert using an offset spatula.

Fresh Strawberries with Vanilla Dip
2 lbs of fresh strawberries, washed
1 16 oz container sour cream
1 3 3/4 oz package of vanilla instant pudding mix

Mix sour cream and pudding mix together until combined. Chill until ready to serve. Serve with fresh strawberries (or any fruit of your choice!).

  2. I made the Chocolate Eclair Dessert for Easter and it was FABULOUS! The pan was gone that day! My favorite part was that it was SO easy and quick! My daughter wanted to help, but there really wasn't much to help with it was THAT easy! Thank you for sharing all of your wonderful ideas! I'm sure I'll be making this again!
