Roasted Garlic, Pesto & Chicken Pizza

Looking for a more "grown-up" pizza to make for pizza night at home? This is the one! Although, just to warn you, the kids in my house loved this pizza just as much as the adults. We do homemade pizza almost every Friday night. Our toppings usually consist of cheese and pepperoni, and whatever leftover meat and veggies we have in the fridge. I saw this recipe on Pinterest and was excited that I had leftover chicken and plenty of herbs in my fridge to make this pizza. You can check out this post on Roasted Garlic and this post on Basil Herb Pesto (what I used), but you certainly don't have to make those to make this pizza. You can use store bought pesto and minced garlic instead.

Roasted Garlic, Pesto & Chicken Pizza
recipe slightly adapted from Sugar Cooking

Ingredients:
1 pizza dough (recipe here), or you can use store bought pizza dough found in the bakery
1 head of roasted garlic (recipe here), or you can just use 1-2 cloves minced raw garlic
1/2 cup basil herb pesto (recipe here), or you can use store bought pesto
1 cup sliced leftover chicken
1 cup shredded mozzarella cheese
1/2 cup grated Pecorino Romano cheese
1/2 cup grated Parmesan cheese

Directions:
Preheat oven to 450 degrees.
Roll out your pizza dough to a large circle (I did my circle the same size as my Pampered Chef pizza stone). Fold over the edges to make a crust. Prick the dough all over with a fork and cook for 8 minutes.
This is what it should look like. Mine is a little brown, because I used all wheat flour when I made the dough, and I cooked it too close to the top of the oven. It still tasted great :)
Mash your roasted garlic to make a paste.
Spread the roasted garlic all over the pre-cooked pizza crust.
Remember that delicious basil herb pesto we made?
Spread the pesto all over the crust and roasted garlic.
Next, add your leftover chicken in a single layer.
Sprinkle with the mozzarella, Pecorino Romano and Parmesan cheeses.
Bake until top is lightly browned, about 8 more minutes. Make sure you move your oven rack to the center position, or lower to prevent over browning your crust like I did.
Let the pizza cool for about 5 minutes before you dig in.

    Pizza is still in my 'out of my league' category. I didn't know you could buy dough at the store! Sounds deLISH.
