Pulled Pork Sandwiches

I love recipes that are easy to make, that make a large quantity of food, and don't require turning your oven on. When my brother and sister in law came up to the lake to visit while we were on vacation last week, I made pulled pork in the crockpot (perfect considering the heat wave we were having in Maine). This recipe is very versatile and literally makes enough to feed a small army. You can put this together in the crockpot in the morning in less than 5 minutes and stay out of the kitchen all day!

Pulled Pork Sandwiches
Ingredients:
1/2 onion, sliced
4 pound pork shoulder, trimmed of any visible fat
salt, pepper
1/4 cup brown sugar
1 can soda (pepsi, coke, cherry coke, 7Up, rootbeer, ginger ale, whatever)
bbq sauce
rolls
coleslaw
pickles
Directions:Placed sliced onion in bottom of crockpot. Remove any netting or string from pork shoulder (it may fall apart slightly, no worries). Trim any large pieces of visible fat. Generously salt and pepper pork shoulder.
Rub the brown sugar all over the pork. Don't be afraid to use your hands to really rub in the salt, pepper and brown sugar.
Place the pork over the sliced onions in the crockpot.
Add a can of soda to the crockpot - any kind. It really doesn't matter what kind of soda you use, but please do not use diet soda.
Cover and turn crockpot on low for about 8 hours, or until the pork is tender and falling apart.
You will probably end up with several large pieces, which is okay. Remove from crockpot and place on cutting board. Remove the liquid from the crockpot and reserve 1/2 cup (strain and discard the onions).
Using two forks, shred the pork. Remove any pieces of fat. Place the shredded pork back into the crockpot, and add about 1/2 cup of the reserved liquid.
Add 1 to 2 cups of your favorite bbq sauce to the shredded pork, depending how saucy you like it.
Let the pork and bbq sauce meld together in the crockpot for about 15 to 20 minutes.
Yum. Doesn't that look great?
Serve the pulled pork and build your sandwich. Here is how we like ours - first, pulled pork.
Second, a drizzle of more bbq sauce.
Third, a bit of coleslaw. Wow, my mouth is watering just looking back at these pictures.
Fourth, a couple of dill pickles.
Delicious. And messy. But so soo sooo good.
Seriously, you have to make this. It is super easy and taste delicious. We love having leftovers too. Leftover pulled pork is tasty in a sandwich, but is also great in quesadillas with some shredded pepper jack cheese.
Oh, and did I mention that these pulled pork sandwiches are kid approved?

  2. Mmmm, yes, please. I made this when I was on vacation too! Only my recipe was lame compared to yours. My friend just told me to put a pork loin in a crockpot with some johnnies seasoning and a little water. I'm willing to bet this has way more flavor, hehe.

    Do you think this recipe would work the same with a pork loin (I have one in the freezer) or is a shoulder the secret inredient? Maybe just cook it less time?

  4. Good BBQ sauce choice. I went to Stubb's restaurant when I was in Austin and it was delicious! I will definitely be making this soon, I love the soda idea.

  6. Yum, I will have to try this! We LOVE Stubs and we also LOVE BBQ! I make it often with in the crockpot with the pork loin since it has less fat! Thanks for sharing this receipe!
