M and M Cookies...Egg and Nut Free
recipe adapted from Food Allergy Mama Baking Book
2/3 cup shortening
1/2 cup brown sugar
1/2 cup granulated sugar
1 tsp. good quality vanilla extract
1/4 cup unsweetened applesauce
1 3/4 cups all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup mini chocolate chips
1/2 heaping cup m&m candies
Preheat oven to 375 degrees and line a baking sheet with parchment paper or nonstick baking mat (silpat). In a mixer fitted with the paddle attachment combine the shortening, brown sugar, granulated sugar, vanilla and applesauce. Add the flour, baking soda and salt to shortening mixture and combine until creamy. How cute are these little matryoshka measuring spoons? My little helper Ethan loves to use them.
Add the mini chocolate chips and mix on low speed. Stir in most of the m&m candies by hand, reserving a few to put on the tops. Drop with a cookie scooper onto prepared baking sheet. Lightly push 2-3 m&m candies onto the top of each scoop of dough.Bake 12 minutes or until lightly brown. Cool slightly on baking sheet.
Package in a festive tin to bring to a party, or to give as a gift.
