Rolo Cake Mix Bars

Rolo candies are so yummy.  I bought a bag of them to make this dessert and we could not stop eating them. They are so good!  Thankfully I didn't need the entire bag so our munching didn't interfere. I am always on the lookout for easy dessert recipes that do not contain nuts or eggs (my oldest son is highly allergic) so this recipe went straight to my Pinterest "Good Eats" board when my friend Bekki sent me the link to the recipe on Cookies & Cups.
The bars were delicious, and pretty simple to make.
But let me warn you, those rolos are addicting!  Watch out :)

Rolo Cake Mix Bars
recipe from Cookies & Cups
Ingredients:
1 box (18.25 oz) yellow cake mix, dry
5 oz evaporated milk
1/4 cup butter, melted
40 Rolo Candies, unwrapped and cut in half
Directions:
Preheat oven to 350° and spray a 9 by 13 glass baking dish with non-stick cooking spray.
In a stand mixer (or in a mixing bowl with a electric hand mixer), beat cake mix, evaporated milk and butter until combined.
Mixture will be thick and sticky.
Divide batter in half .
Press one half into the bottom of the pan.
Bake until just set, approximately 8-9 minutes.
Remove from oven and place Rolo candies, caramel-side down on top.
Using the two spoon method, drop remaining batter on top of Rolos in small teaspoon size amounts.
Bake for 20-24 minutes longer until top begins to golden.
Cool completely.
Cut into small squares.  
Oooey and gooey.
 Delicious.
This little guy loved them.
