Ziti Pasta Bake

It's been a while since I've shared a tasty recipe with you...for that, I am sorry.  I have been cooking and baking quite a bit this holiday season, decorating, making handmade gifts, etc.  Also, my number one job as Mom has been extra busy which is why I haven't had much time to blog.  Have no fear though, I haven't forgotten about you, in case you were wondering.  And just to prove that point I am sharing an easy dinner than you can make ahead and refrigerate (up to 2 days) before cooking, or freeze for a future meal, or give as a meal to go for someone in need.  This recipe is my mom's and everyone in our family loves it.  It also reheats really well as leftovers.

Ziti Pasta Bake
feeds 4-6 hungry people
Ingredients:
1 box ziti pasta (1 lb)
1 jar pasta sauce
1 8 oz can tomato sauce
1 lb ground beef (or Italian sausage)
1 cup pepperoni slices (pizza pepperoni)* optional but everyone always loves it
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
handful of grated Parmesan cheese

Directions:
In large pan, brown the beef.
Drain any excess grease.
Add the tomato sauces to the ground beef.
Simmer over low heat to warm through. 
Cut the pepperoni circles in half. 
Add the pepperoni to the sauce and continue to simmer.
Cook pasta until al dente, drain, and add the meat sauce mixture.
Mix together until all the pasta is coated with the meat sauce.
Pour into a 9 by 13 glass or aluminum baking dish (I use disposable pans when I make this meal for someone else). 
Top with the shredded cheeses.
If you are not going to cook right way, cover with foil and refrigerate or freeze (or give away!).
Once you are ready to cook it (defrost overnight in fridge if it is frozen), place in oven at 350 degrees for about 35 minutes, until completely warmed through and lightly browned on top.
And there ya have it, a tasty, filling dinner.  Perfect any night of the week and any time of year.
