Quick & Easy Meal - Steak Sandwiches

This is my favorite way to eat leftover steak. I love steak sandwiches. When I see a good sale on sirloin steak, I stock up. And when I make steak for dinner, I always make a little more, just so we can have leftovers to make steak sandwiches. These are hearty enough to serve for dinner, with a salad (and chips for the boys) alongside. You can use whatever veggies you like, but I will share how we like them best. The key to using leftover steak is to just warm it in the skillet, and to NOT cook it further. If you leave your steak in the pan longer than 1-2 minutes, it will be tough and chewy. If you add it to the pan AFTER cooking the other ingredients and just warm though, about one minute, it will be tender and delicious. My mom makes these sandwiches perfectly and passed this recipe to me, along with these special cooking tips I am sharing with you today,.
Steak Sandwiches
makes 4 sandwiches
1 onion, peeled and sliced thin
1 bell pepper, seeded and sliced thin
1 cup mushrooms, sliced thin
1 Tbsp olive oil
1 1/2 to 2 cups leftover cooked steak, sliced thin
1-2 Tbsp Worcestershire sauce
your favorite rolls, lightly toasted
A1 sauce, for serving
Heat a large skillet or cast iron pan over medium heat. Add olive oil and saute onion, peppers and mushrooms for about five minutes. You want the veggies to be soft, but still vibrant in color. Add the steak and Worcestershire sauce and cook for one to two minutes, until steak is warmed through. Remove pan from heat and assemble sandwiches on toasted rolls. I like to add a dash of A1 sauce over the top of the steak/veggies.
These are soooo good. I love the way the steak soaks up the flavor from the Worcestershire sauce. Steak Sandwiches are a great way to use up leftover steak, and a good excuse to cook a little extra steak, too :) Some people are afraid of cooking steak because they don't want to ruin it. Here are some tips for cooking steak that I learned from my mom: buy a good cut of meat, like sirloin (you can't ruin a good cut of meat, even if you over cook, it it will still be tender), leave the steak on the counter for about 20 minutes before cooking, and after cooking let it rest for about 5 minutes before you slice it.
